Biscotti Goodness

My package finally arrived in the mail!! Here I have Vegan with a Vengeance, La Dolce Vegan and Madonna’s Hard Candy CD. I love getting packages with goodies from Amazon (now, if they would start selling food on Amazon in Canada, I’d be set!). =)

Lunch yesterday was Lindsay’s fabulous Red Lentil Dal. Everyone’s been raving about this, and I had to try it. Delicious! So easy, and no oil, which is something I love. I didn’t have anything with it, so I enjoyed a full two servings. It’s that good.

For dinner, I had some Cucumbers, Amy’s California Burger and Sundried tomatoes, rapini, broccoli and yellow peppers.

It has been far too long since I’ve had pasta. I’m addicted to pasta, so how could I let this happen?? I made some Whole Wheat Spaghetti with Tomato Nooch Sauce and Broccoli. Yum, is all I can say.

Super easy to make: 1/4 cup unsweetened almond milk, 2 tbsp. water, 1/2 cup tomato puree (or sauce), 2 tbsp. nutritional yeast, red pepper flakes, garlic powder, parsley, oregano, salt & pepper.

My friend Alicia is having her birthday party tonight. So I thought I’d bake her some biscotti! I came up with these last night and couldn’t wait to bake them. They’re so simple and delicious too.

Almond Chocolate Chip Biscotti

Makes 24

2 cups whole wheat flour

1/2 cup toasted almonds, sliced

1/2 cup sugar

1 tsp. baking powder

1/3 cup non-dairy chocolate chips

1 1/2 tablespoons Ener-G Egg Replacer

6 tablespoons water

1 tsp. vanilla extract

Directions

Preheat oven at 350 degrees.

In a large bowl, mix whole wheat flour, sugar and baking powder. In a small bowl, combine the Ener-G Egg Replacer with the water until well blended.

Add to flour mixture along with vanilla extract.

Fold in almonds and chocolate chips and knead dough until it comes together. Add more water if necessary. About a tablespoon or two.

Divide into two balls. Roll each ball into a log and flatten.

Bake for 10 minutes. Remove from oven and slice each log into 12 even pieces. Put pieces back on cookie sheet. Bake 10 minutes on one side and 5 on the other, until golden brown.

Do not be tempted to overbake, they will become too hard.

Cool for 10 minutes.

    I too love Amazon packages - sounds like you got some great stuff!

    Between the dal, veggie=burger-vegetable meal, pasta, and biscotti, my mouth is watering - Romina, I am in awe of all of the cooking/baking you’ve done!! Oh and I KNOW that the biscotti will be a hit at your friend’s party tonight :0)

    La Dolce Vegan is my favorite cookbook, hands down. I haven’t come accross a bad recipe yet!

    Wow! That pasta looks sooo good. I am definitely saving that sauce recipe on my computer :)
    I have never made biscotti before, so thanks for posting the helpful pics for when I get around to it.

    Oh my, if Amazon sold food, I’d spend the rest of my life on the internet and waiting by the mailbox!
    The pasta sauce sounds yummy! I’ve never made sauce before, so this would be awesome to test out!
    I’m sure people at the party would love the biscotti! Almond + chocolate = amazing

    So many yummy dishes! I love the sound of your simple tomato sauce–great for a quick and delicious dinner. The biscotti are a must-try, too. I’ve only made them once and, unfortunately, didn’t have your advice back then, so baked them too long. They made good doorstops, though!

    I love packages! I totally agree with you on the ‘no food to Canada’ thing on Amazon…Not cool. I really wish I could find things like z-bars in Canada, but alas, no luck haha. The biscotti look awesome, and I think I must be the only one who hasn’t tried Lindsay’s dal yet- I’m going to have to get on that! Have an awesome weekend!

    I love getting packages from Amazon too - whoever developed that site is a genius!

    I’m going to have to get some nutritional yeast soon. There are so many recipes that use it and they all look so tasty!

    Your biscotti looks incredible, and that recipe is so easy I might have to try it soon. I bet it would taste yummy with my coffee cocoa! ;)

    It’s always good to get something in the mail. The anticipation and then the excitement when it arrives. it’s like you received a present, but from yourself. haha.
